This exquisite coffee delights with the aroma of ripe strawberries, vibrant red fruits, and a candy-like mouthfeel. Bright acidity and a syrupy smooth body create a harmonious balance, leaving a long, fruity finish.

    Altitude: 1900m

  • Anaerobic Thermal Shock with Wine Yeast

    1. Selected beans are sterilized with ozonated water and ultraviolet light.

    2. After pulping, beans are placed in an anaerobic bioreactor with Saccharomyces pastorianus yeast (commonly used in beer and wine) to enhance aroma and character.

    3. Fermentation lasts 96 hours, followed by a thermal shock wash and controlled drying for 48 hours.

    Roast: light-medium

  • Spiced mango, strawberry candy, and hibiscus with a juicy acidity and a silky mouthfeel.

Cinnamon Co-Ferment Blend

An innovative, co-fermented coffee with layers of woody cinnamon, vanilla, and lemon tonic. This unique process infuses the beans with spice, creating a bright, citrusy acidity and a lingering, spiced mouthfeel.

  • Pitalito, Huila, Colombia & Ethiopia

    Altitude: 1750m

  • Co-Ferment / Mossto Honey / Washed Process

    • Cherries with 24° brix sugar content are soaked in water for 4 hours to clean and hydrate.

    • Undergoes an initial 12-hour co-fermentation with fresh cinnamon and coffee mossto.

    • Cherries are depulped, leaving 50% mucilage, then ferment again for 12 more hours with grapes and mossto honey.

    • Dried for 26 days on raised beds using the ‘honey’ process.

    • Aged in grainpro bags for 10 days before selection.

    Roast: light-medium

  • Cinnamon spice, ripe grapes, and honeyed sweetness with a velvety body and bright acidity.

A smooth and well-balanced, chemical-free decaf, using the Swiss Water Process to preserve its natural flavors while removing 99.9% of caffeine.

    Altitude: 800m - 1200m

  • Swiss Water Process (Chemical-Free Decaf)

    • Green coffee is soaked in proprietary Green Coffee Extract (GCE), which contains all natural coffee compounds except caffeine.

    • The beans are gently heated to expand and become porous, allowing caffeine molecules to move out through osmosis while preserving flavor and aroma.

    • The process is repeated until the coffee is 99.9% caffeine-free, maintaining a rich and balanced taste.

    • Unlike conventional methods, Swiss Water decaffeination uses no chemicals, avoiding solvents like methylene chloride.

    Roast: Medium

  • Nutty and chocolatey with subtle caramel sweetness. Medium body and mild acidity.
